Nikki's mousse

Chocolate Melting
The recipe calls for mint flavoured chocolate. Instead I used Peppermint Crisp. I thought that the straws would give it a nice texture but the straws melted into the chocolate mixture. First I melted the chocolate in the double boiler with the help of my cousin. She did a very good job but wanted to know if it was ready all the time. While she was stirring I separated the eggs. That was easy but messy. I hate separating eggs. The next step was to put water in the melted chocolate. Again my cousin helped me with that. When the chocolate mixture was smooth we let it cool for about 10 minutes.
Meringue Mixture
Once it was cool I whisked the egg yolks and added it to the chocolate mixture. Then put it back on the stove. The recipe said cook for 5 minutes until thick but my mixture took a long time to thicken. To be honest I don’t think I let it thicken enough. Once the mixture was thickened I started beating the egg whites till they were stiff. I learnt from my macaroons that you must beat the eggs for a long time. So this time I left them for quite a while. When they were nice and stiff I added the castor sugar until it went glossy.
Chocolate and Meringue
After the meringue mixture was done I folded the chocolate mixture into it. It was very easy to fold. A few lumps formed but I just folded them in. They weren’t really lumps but air bubbles. Once the mixture was nice and light I poured it into little glass bowls and put white vermicelli over it. Then carefully placed it in the fridge and left it for a good couple of hours.
Final product
The mousse was a big hit. everyone loved it. I had one problem. some of the chocolate separated to the bottom. I figured why it did that: because the chocolate mixture was not thick enough. I will definitely use this recipe again and next time I will make the chocolate mixture thicker.
